Basic homemade ice cream recipe

Ingredients

  • 8 egg whites
  • 1 cup of sugar
  • 2 cups of sweetened condensed milk
  • 400 milliliters of cream
  • 2 teaspoons of vanilla extract
  • 1 pinch of salt

Preparation

  1. Beat the whites with the sugar, the vanilla extract and the pinch of salt. This should produce a yellow, frothy cream. You know it’s beaten enough when by lifting the beater you can form a letter, which takes a few seconds to disappear.
  2. At this point, add the sweetened condensed milk and cream. Continue beating slowly until all the ingredients are incorporated. Once homogeneous, put it in the freezer.
  3. To prevent ice from crystallizing and freezing like ice, it is necessary to place it in ice cube trays. In this way, the air that escapes when it cools is less than if it were placed in a larger container. Therefore, the next step is to place the resulting cream in ice cube trays and put it in the freezer for a few hours.
  4. To serve on its own, unmold the ice cream and present it like this, in the shape of ice cubes.
  5. If you want to serve the traditional way, crush the ice cubes for a few minutes and place the result in a large container. Return to the freezer for half an hour. Finally, prepare the scoops of ice cream and serve them.
  6. To make homemade ice cream with different flavors,  just add a cup of fruit puree and a few drops of food coloring to the cream to color it.
